I can’t make a post on avocados without sharing my favorite way of eating them: guacamole! Even though this is photography blog and not a cooking blog, posting about guacamole is definitely appropriate — I can’t go a day on set without having this on hand for a hungry crew! Rather than worrying about the ingredients, I swear by the method:

  • Chop the onions, jalepeños, and cilantro into an equal sized mince.
  • Mash the minced ingredients into large cubes of avocado. (This step is absolutely crucial as it keeps the guacamole from turning into slop.)
  • Add a lot of lime juice, salt, and ground pepper.

To see the method first-hand, head to a TexMex restaurant with a guacamole bar (like Caliente Cab in NYC) and watch the pros make it next to your table.
